Black Bean Corn Salsa

I made this simple recipe for Ryan's birthday party. It was a huge hit I had to share. It came from Marti, our mentor mom at MOPS. She is also responsible for the yummy homemade spaghetti and meat sauce! If you need a salsa recipe for a party or just want something yummy to snack on try this recipe.

BLACK BEAN CORN SALSA
Ingredients: 1 can black beans
1 can yellow corn
2 large diced tomatos
1 cup diced red onion
1 tsp cumin
2 tsp lime juice
2 garlic cloves chopped
3 T olive oil
2 to 3 T fresh cilanto
salt and pepper to taste

Directions: Rinse black beans and drain corn. Place in bowl. Add remaining ingredients, toss lightly and cover and refrigerate. Serve with chips or as a side salad.
