Red Velvet Gooey Butter Cookies


 I saw these on Jennifer's blog last week and I knew I had to try them.  I made them on Friday to take to small group that night.  They were super easy to make and seriously melt in your mouth.  If you are looking for a yummy treat for your next party or just want something good to curb that sweet tooth, make these treats.  You will thank me later!

Red Velvet Gooey Butter Cookies

Ingredients: 1 teaspoon vanilla extracts
1 box (18 ox) box of moist red velvet cake mix (you can use any flavor of cake mix)
1 (8 oz) brick of cream cheese - room temp
1 egg
1 stick of butter - room temp
Confectioner's sugar for dusting

Directions
Preheat oven to 350 degrees.  In a large bowel cream the cream cheese and butter until smooth.  Beat in the egg.  Then beat in the vanilla extract.  Beat in the cake mix.  Cover and refrigerate for up to 2 hours to firm up so that you can roll the batter into balls.  Roll the chilled batter into tablespoon size balls and then roll in confectioners sugar. Place on ungreased cookie sheet, 2 inches apart.  Bake 12 minutes. The cookies will be soft and gooey.  Cool completely and sprinkle with confectioner sugar if desired.  Enjoy!
