Stove Top Chicken Casserole

We eat a lot of chicken in our house.  I'm always looking for easy recipes and there are a ton of chicken casserole recipes out there.  Today I'm going to share with you an easy and yummy chicken casserole meal by my friend Amber over at This Mommy Cooks.  Can I just say again how impressed I am that Amber has 3 kids - 5 and under - and she cooks homemade dinner almost every night.

Stove Top Chicken Casserole

Ingredients:
2 cups cooked chicken, shredded or cubed (I usually make it with raw chicken and it cooks all the way in the oven)
8 oz sour cream
1 can cream of chicken
1/2 cup cheddar cheese, shredded
1 box Stove Top Stuffing (I used whole wheat chicken flavored)
salt and pepper to taste
4 TBSP butter, melted

Directions:
Preheat oven to 400 degrees. Spray 9x13 baking dish with nonstick spray.  Spread chicken on bottom of baking dish, season with salt and pepper.  Sprinkle cheese on top of chicken. In separate bowl, mix sour cream and cream of chicken soup. Spread sour cream mixture on top of cheese.  Sprinkle entire box of Stove Top on top of sour cream and soup mixture. Finally, drizzle melted butter on top of entire casserole.  Cover with tin foil and bake for 30 minutes covered, until bubbly.

Now I know what to do with that Stovetop that has been sitting in my cupboards for awhile;)
